Ingredients:
- 1 kg of Bean clams;
- 3 tablespoons olive oil;
- 5 Garlic cloves;
- Chopped coriander leaves;
- Juice of 1 lemon;
- Salt and pepper to taste;
- 1 or 2 Chilli peppers.
Method:
Wash the shells and soak in salted water for about 12 hours.
Add in a pan, garlic cut into slices and let them fry in the olive oil. Season with salt, pepper and chilli (s) and let simmer on a low heat mixing occasionally.
Remove from the heat immediately (so they stay juicy) and sprinkle with chopped coriander and season with lemon juice.
Serve on a tray with lemon segments.
They are a delight as a snack in the summer !!!!
